What are the differences between AppDynamics SaaS and Cisco Cloud Observability?
Anyone please elaborate the different of them? like the purpose, key, features, etc.

It comes down to your specific use case and the type of app (traditional/hybrid, cloud-native/Kubernetes) and environment (on-prem, hybrid, or cloud) you need to monitor. You should contact your AppD Rep and talk with them to see what is best for your specific needs.
